Green Chili Sauce Recipe

Use roasted green chilies and chopped tomatillos with a hint of cilantro to make a fresh green chili sauce.

Ingredients:

  • 14 fresh green chilies
  • 3 tomatillos
  • 1/4 cup green onions, minced
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1 tablespoon chopped cilantro
  • squeeze of lime juice
  • black pepper to taste

Method:

  1. Roast the green chilies over a gas flame or under a very hot broiler until their skins turn black.
  2. Place them in a paper or plastic bag for 10 minutes to steam the skins free.
  3. Remove the stems and peel then chop finely.
  4. Remove the husks of the tomatillos then boil them for around 3-4 minutes.
  5. Remove their seeds and chop them.
  6. combine the chilies, tomatillos, green onions, garlic, salt, pepper, lime juice and cilantro together. You can use a blender to get a more combined texture if you like.

Simple Chili Sauce

Very simple and healthy chili sauce recipe.  Really quick to make, just boil the ingredients and blend.

Ingredients:

  • fresh tomatoes, chopped
  • 2 tablespoons of tomato purée
  • 2 medium onions, chopped
  • 4-5 fresh chilli peppers (according to taste), chopped
  • 1 crushed garlic clove
  • 2 tablespoons wine vinegar
  • 1 tablespoon sugar
  • A pinch of salt if required

Directions:

  1. Place all the ingredients into a heavy pan of boil water
  2. simmer for 15-20 minutes, stirring the mixture continuously
  3. Allow it to cool, then pour it into a food processor
  4. blend until smooth
  5. Return to the pan, and allow to simmer for up to half an hour or until it has reached the preferred consistency.

Basic Chili Sauce Recipe

A smooth sauce made from powder instead of chili’s and strained before final simmer. Use Mild, Medium or Hot powder to vary the strength of the sauce. New Mexico or Chimayó powder can be used where available.

Ingredients:

  • 3/4 cup Red chili powder - Chimayó or New Mexico Style
  • 3 Cloves of garlic crushed and peeled
  • 1 small vidalia onion chopped
  • 1 teaspoon dried cumin
  • 1 teaspoon sugar
  • Salt to taste.

Directions:

  1. Boil 2 cups of water and cool for 3 minutes.
  2. Stir in chili powder with a fork and form a thin paste - let sit for 30 minutes.
  3. Combine chili paste, garlic, onion and sugar and blend until smooth. Thin with more water if sauce is too thick.
  4. strain sauce into large sauce pan heat over a medium flame and add cumin, and season with salt to taste.
  5. simmer for 10 minutes

Serve hot or cool
